hen and where to use pastry brushes
In a kitchen or bakery, there are a lot of steps during the cooking or baking process for which a pastry brush is needed. Greasing baking tins is particularly gentle with a silicone model, as it doesn’t damage the coating. A silicone brush also does a good job when brushing steaks, roast beef, or baked delicacies. The particularly flexible bristles reach into every corner and are also heat-resistant up to 270° C. Silicone brushes are non-absorbent, drip just a little and are suitable for large surfaces. A pastry brush with natural bristles or made of polyester is convincing with its accuracy, as the hair structure is much finer. When greasing, every surface, however small, is covered. At the same time, the different versions are also suitable for filigree work. Even the smallest pastries can be coated with a glaze.
Characteristics of pastry brushes
Pastry brushes have a wide brush head and are ideal for decorating food and baked goods, but also for properly greasing baking tins.
Silicone pastry brushes can be cleaned quickly in the dishwasher after use. They usually have a plastic handle. With a hanging hole, they can be stored in a space-saving way together with other kitchen utensils. Another advantage of silicone is that the pastry brushes do not lose any bristles and are, if cared for properly, very long-lasting.
Pastry brushes with natural bristles convince with high absorbency. This means that meat or baked goods can be coated more quickly. They, however, can occasionally lose bristles and must then be replaced promptly. In addition, the natural bristles are not dishwasher-safe but can be cleaned quickly and hygienically by hand. They are only heat-resistant at low temperatures but are ideal for preparing, decorating, and greasing.
Baking brushes with bristles made of polyester offer the great advantage that they are heat-resistant up to +230° C for short periods. Therefore, no problem, when hot masses need to be spread or when greasing a roast directly during the cooking process.
Flour and bread brushes
In addition to baking brushes, every professional kitchen equipment also includes bread and flour brushes. A bread brush with a practical plastic handle and polyester bristles, for example, can be used to efficiently brush the bread loaves on the baking tray with liquid, egg, or fat. But they can also be useful during the preparation of dough to brush off excess flour. Flour brushes are also suitable for this purpose but are used far more often when it is necessary to clean the worktop quickly after preparation. They are available in a variety of designs – with natural or polyester bristles, wooden or plastic backs and even in different colours.
